Ingredients:
- 500 grams beef, finely chopped
- 12 pieces of ice cubes (about 100 grams)
- 1 egg white
- 9 tablespoons tapioca flour
- 2 teaspoons salt
- 1 teaspoon ground pepper
- 1 teaspoon baking powder
- 1 tablespoon garlic powder (or use 4 cloves fried first)
- 2500 ml water
Broth Ingredients:
- 2000 ml water (remaining from boiling the meatballs)
- 12 cloves garlic, finely chopped
- Sugar, salt, and pepper to taste
- 1 stalk spring onion, finely sliced
Serving Accompaniments:
- Cooked pakchoy
- Cooked white or yellow noodles
- Sliced spring onions
- Sweet soy sauce (kecap manis) and chili sauce (sambal)
- Fried chili sauce (sambal rebus)
Instructions:
- Prepare all the ingredients.
- Crush the ice cubes by putting them in a plastic bag and pounding them until finely crushed (use an ice shaver if available).
- Cut the beef into small pieces, then put them in a food processor and process until smooth. Add the crushed ice little by little. Add the egg white and process until smooth.
- Add tapioca flour, baking powder, garlic powder, ground pepper, and salt. Process again until the mixture is well combined and has a paste-like texture.
- Bring the water to a boil, then turn off the heat. Shape the meat mixture into balls using your hands (see picture), and with the help of a tablespoon, gently drop them into the boiling water (to prevent sticking, dip the spoon in water). Do this until all the mixture is used. Turn on medium heat and wait for the meatballs to float. Remove from heat.
- Then place it in ice water. Lift it up
- Make the sauce. Saute the finely chopped garlic until fragrant, then put it into the meatball’s remaining boiling water (it tastes better when mixed with bone bones) add salt and pepper. Wait for it to boil, then put the sliced onions in the broth and finally, even cooled. The thus serve thezelf using much better.
